I started seeing this plant a year ago, shortly after we first moved to Goshen County. Today, I finally stopped to photograph a few. This is prickly poppy. It looks like a thistle, but is actually a member of the poppy family. It is considered a weed in these parts, mostly because its spiny parts make it undesirable to cattle. But the seeds make great food for birds because the seeds have a high oil content.
Some folks call this a “Cowboy’s Fried Egg.” But I won’t be eating it, as it can be toxic to humans as well. I’ll be content with take photos of its beautiful, papery petals instead!
